OUR MICROBIOME AND SPROUTS
Everyone is talking about the Microbiome. My (Gil) dictionary app defines it as - the totality of microorganisms and their collective genetic material present in or on the human body or in any other environment. Basically - it is the creatures that make us up - without which we would be nothing but a pile of organic material. We are indeed what we eat. We are a collection of bacteria and such.
Sprouts are packed with healthy bacteria! We’ve been beating this drum for 30 years now. Curious that so many people fear sprouts for the extremely rare instances of bad bacteria - which have NEVER been blamed on organic sprouts. WE REQUIRE THESE BACTERIA. They make us what we are - and since they contain their own enzymes, they basically digest themselves - requiring no enzymes from our bodies to be used.
Sprouts are alive when we eat them. It does not get any better than sprouts - and Microgreens, of course - so Eat More Sprouts & Micros @:-) and Grow Your Own!
The Research
Much of the current research on the microbiome is led by Dr. Sabine Hazan an enterologist and research scientist practicing in Malibu, CA. (Yes, she admits she is a doctor to the stars, which I guess is bound to happen if you live in Malibu.) It is Dr. Hazan’s hope that more scientists join the research into how the microbiome can help us restore and maintain health. Of particular interest is a genus of bacteria called bifidobacteria. If you take probiotics, check the label; several strains are probably listed. Dr. Hazan has discovered by testing people in the same families that those hosting a good number of bifido can fight off viruses - but those without any bifido cannot.
According to an article in the American Museum of Natural History by Dr. Susan Perkins the Human Genome Project which was completed in 2003 demonstrated that the human genome has only about 20,000 protein-coding genes, no more than a mouse and less than some plants. So how do we function? Dr. Perkins explains that each of us has an ecosystem comprised of an estimated one trillion other microscopic organisms living in (and on) us all the time. These organisms, our microbiome, contain 300 times the number of genes that are expressed by our own genome. And, 99% of the unique genes in our bodies are bacterial; only about 1% are human. With an estimated 30 trillion cells in the human body, less than one-third are human. The other 70% are bacterial or fungal. These facts really beg the question: who are we?

THE DIFFERENCE BETWEEN SPROUTS AND MICROGREENS
To us the difference is that with Sprouts we grow with nothing but water and we eat the entire crop (with the possible exception of hulls and roots that grow out the bottom of our Stainless Steel Sprouters) - and they are alive when we eat them. Microgreens are grown on a medium and we harvest them by cutting them just above that medium - at which point they move from alive to not. Raw, great, delicious - just not alive.
While I'm on this subject I need to explain why we have two different names for the same seed - like Broccoli Sprouts and Broccoli Microgreens. This is the same seed. The difference is that each crop has its own page - you go to the Broccoli Sprouts page to learn how to grow the seed into Sprouts and you go to the Broccoli Microgreens page to learn how to grow it into Micros.
This seed will also grow a full sized - which is like 3 feet tall and 2 feet wide - Broccoli plant in a garden - given the proper climate and encouragement.

I love your enthusiasm about all things sprout. It brings me happiness each time I receive your postings. Thank you! I am a newbie to growing my own sprouts and your expertise has brought me sprouting success without actually having a green thumb 😆. I'm currently enjoying some delicious broccoli and radish sprouts and even got one of my dogs on board with the 4 legs of love mix...the other 2, not so much...
